Gluten-Free- the Sunshine Burger!

I have not tasted these little guys but I would be remiss in not sharing this information with you:

They tell me the Sunshine Burger is one of the only companies that offers a gluten-free, soy-free, vegan and
USDA certified organic veggie burger. Only organic whole food ingredients are used, such as raw ground sunflower kernels, brown rice, fresh carrots, herbs and sea salt, all of which (the company is proud to say) consumers can pronounce. Yay!

They went on to share that Organic Sunshine Burgers come in several flavors: Garden Herb, Barbecue, South West, Breakfast and Falafel. All Sunshine Burgers are fully cooked and browned in the oven and come frozen to preserve freshness.  Sound easy to me!

You can find these burgers at Whole Foods as well as in many other health food stores and co-ops across the country. They have been busy getting their products out for us consumers.

Gluten-Free Almond Meal Pancakes

These are incredible and I love these gluten-free delicious treats always turn out.

INGREDIENTS

¾ cups almond flour

1/8 tsp salt

¼ tsp baking soda

2 large eggs

1 ½ tbsp water

1-2 tbsp agave nectar

butter or non-stick cooking spray

 

DIRECTIONS

 

1. Heat pancake griddle. When hot, grease with butter or non-stick cooking spray.

2. Mix the almond flour, salt, and baking soda in a medium-sized bowl.

3. Add the eggs, honey, and water into the flour mixture. Combine thoroughly.

4. Spoon the batter onto hot griddle. Cook according to the manufacturer’s instructions.

5. Serve warm with syrup of your choice.

 

These pancakes are a delicious way to start the day! They can also be frozen and easily reheated in a toaster oven for a quick treat anytime.

Sauteed Mahi-Mahi with Cielo ‘Arrabiata’ Sauce

Here is a delicious recipe share by one of my cooks in the test kitchen inFlorida using the Cielo Arrabiata Sauce we were testing.

Mahi-Mahi in Cielo ‘Arrabiata’ Sauce

Ingredients:
2 TBL of olive oil
1/4 cup sliced fresh garlic
4-5 chopped sweet ‘baby’ peppers
1/2 cup chopped fresh green onion
1/2 cup chopped fresh cilantro
1 Jar of Cielo Arrabiata sauce
2- 3 medium potatoes (peeled and slicedvery thin)
1 – 1.5 lb. Mahi-Mahi 
1/2 – 1 cup of water
Salt to taste

Directions:
On low-medium heat the olive oil in a large skillet or large pan.
Add the garlic, chopped peppers and the green onion. 
Saute until only until they to soften.
Add the Mahi-Mahi and lightly saute it.
(Do not over cook!)
Chop the potatoes to 1/2″ slices and quarter them.
Add the potatoes and the ’Arrabiata’ sauce.
Add the water, cover and let it simmer for only about 20 min.
Add the chopped cilantro and seasoning and let simmer
for about 5-10 more minutes or until the potatoes are soft.
Serve immediately and enjoy!

Gluten-Free Crostini with Sun-Dried Tomato Pesto and Feta Cheese

There’s always a little Italian in all of us, and for us on a Gluten-Free diet, we have to come up with ways to satisfy all our taste desires – and we easily can.
Here you go!

INGREDIENTS:

Sun-dried tomato pesto:

¾ cup sun-dried tomatoes (not packed in oil)
3-4 cloves garlic, to taste
1 tablespoon fresh parsley
¼ cup grated Parmesan cheese or Pecorino Romano
2 tablespoons pignoli nuts (toasted)
¼ teaspoon salt
1/8 teaspoon black pepper
2 tablespoons olive oil
½ teaspoon balsamic vinegar

Crostini

12 thin slices GF sour dough bread or any good hearty GF bread
(cut bread into smaller pieces if you arent’ able to buy tubular)
½ cup crumbled feta cheese
12 fresh basil leaves

DIRECTIONS:

1. Preheat oven to 350 degrees.

2. Soak sun-dried tomatoes in very hot water until soft, 5-10 minutes and drain, reserving your liquid.

3. Place tomatoes and remaining pesto ingredients in blender or food processor and process until well mixed. If too thick, blend in a little of the reserved liquid. Set aside.

4. On a large baking sheet, toast bread slices for about 5 minutes or until crisp and golden, turning once. Remove from oven.

5. Spread each bread slice with tomato pesto.

6. Top with small amount of crumbled feta cheese and one small basil leaf.

7. Serve.

I love Elana Amsterdam’s theory about cooking as well as her sincere desire to find healthy alternatives to avoiding the highs and lows of blood sugar without giving up the taste. I have taken her choc. chip recipe and made a fun gift out of  it and made ony a minor adjustment to suit my needs.

NO GRAINS IN THESE COOKIES!

I hope you enjoy and please write in or share your pictures of how your gift-jar turned out, before giving it away.

Place in a  mason jar in layers : use pop top or screw top mason jars

2-1/2 cups blanched almond flour

½ tsp. salt

1/2 tsp. baking soda

½  cup dark chocolate OPTIONS: or 1/4 cup chocolate and 1/4 cup chopped nuts OR 1/4 cup dried cranberries and 1/4 cup chocolate OR 1/4 cup dried cranberries and white chocolate chips- just be imaginative, it is fun and easy!

Create a little decorative gift tag that says this:

Directions:

Preheat your oven to 350 degrees

In a bowl mix”½ cup light agave

½ cup grapeseed

1 tsp. vanilla-optional( I leave this out)

Add your wet ingredients to your dry( in the jar)

Mix real well – it will be  moist

Refrig 30 minutes

Drop onto parchment paper as 1 TBL balls

Flatten them down to about 1/3 inch thick

Bake approx 7-10 minutes

Gluten-Free Walnut Energy Bars

This recipe is delicious and has loads of protein, but does require Gluten-Free oats.

INGREDIENTS

1 cup Gluten-Free oats
1 cup Gluten-Free oat bran
¼ cup rice flour
1 cup walnut pieces
1 ½ cups coarsely chopped dried figs
½ cup rice or whey protein powder
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ cup honey
2 large eggs

DIRECTIONS

1. Preheat the oven to 350 degrees. Coat a 9 x 13 inch baking pan with cooking spray.

2. Place the oats, cereal, flour, walnuts, figs, protein powder, cinnamon and ginger in a food processor; coarsely chop. Add the honey and eggs; pulse until well combined.

3. Transfer the mixture to the pan; spread evenly with your fingers.

4. Bake until lightly browned around the edges, about 20 minutes.

5. Cool in the pan for 15 minutes, and then cut into 16 bars.

6. Store in an airtight container at room temperature for up to 3 days, or wrap individually and freeze for up to 3 months.

As Gluten Awareness Grows, So Does Variety of Gluten-Free Treats

You’ve just been diagnosed with celiac disease or you’ve discovered you have a gluten intolerance. Now what?  You’re going to have to be on a gluten-free diet from now on, your doctor informs you. But wait. Before your disappointment at the thought of diet restrictions starts to set in, take note that there are some exciting new gluten-free recipes you can enjoy.

In the past, this diagnosis may have been disheartening news for you, as a gluten-free diet represented not being able to eat the foods you love. However, times have changed. As a gluten-free and celiac researcher as well as a mom who loves to cook, I can attest that there are a variety of delicious foods, and even desserts, that you can indulge in while still avoiding gluten.

Gluten, which is commonly found in grains such as wheat, rye, barley and oats, has been found to cause severe health problems in people who are intolerant to it. Celiac disease is an autoimmune reaction—a severe, sudden-onset allergic reaction—to the protein called gluten. There is no doubt that a gluten-free diet can relieve people of the painful symptoms of gluten intolerance and celiac disease.  Gluten intolerance can have a slower onset than celiac disease and may be hard to diagnose due to the broad range of symptoms and causes. Many of the symptoms are similar to celiac disease.

The good news is that as awareness for gluten intolerance increases, so does the number of delicious gluten-free recipes. After I discovered that the source of my painful physical symptoms was celiac disease, which took years of running around in circles with doctors who had no clue, finally driving me to research my symptoms on my own, I devoted myself to raising awareness about gluten intolerance. On my gluten-free website, I make sure to present a variety of easy, tasty recipes. Many health-conscious and gluten-free companies, doctors, nutritionists, researchers, and advocates support this website, as well as gluten-free restaurant and bakery owners. I’m also putting together a much-anticipated cookbook of gluten-free recipes.

Some of the delicious recipes that have been compiled on my website are Gluten-Free and DELICIOUS Filled Pastries or “Tarts,” Gluten-Free, Easy Chocolate Dream Pie, and Quick and Delicious Gluten-Free Crepes with Raspberry Sauce. There are also child-friendly recipes available, such as Kids Fun “Ice Cream-Sicles.” Kids will also love the dessert items, such as Gluten-Free Banana Chocolate Chip Muffins.

As part of my campaign to raise gluten-free awareness, I throw popular monthly cupcake parties. The one I threw in September 2009 with much success was sponsored by Pamela’s products with proceeds being donated to the NFCA, the National Foundation for Celiac Awareness. The press coverage was terrific, and I’ve been requested to host more of events like this in the future.

According to health officials, about one out of every hundred Americans suffers from celiac disease. Currently, that total number stands somewhere near three million. With there being such a large number of gluten-intolerant people, it is fortunate there are already so many tasty gluten-free recipes and foods available, and surely the number and variety will only grow in the future as more and more people are correctly diagnosed.
