Don’t assume that your symptoms are unique to you. For much of my life, I just thought that it was just normal for me to be in pain. People with osteoporosis, for example, say that their condition “runs in the family,” ignoring the fact that osteoporosis is often connected with celiac disease, which prevents the absorption of the vitamins and minerals that bones need. You can take a look at the list of symptoms of gluten intolerance and celiac disease on my gluten-free website.

If you’re experiencing any of these symptoms regularly, even if you think you know why, you should schedule an appointment with your physician right away to get tested for celiac disease or gluten sensitivity.

If you suspect that you may have celiac disease or an intolerance to gluten, it’s important to take action now. Studies show that the longer the length of time before a celiac diagnosis, the greater the chance of developing serious health risks.

Untreated celiac disease can actually be life-threatening. Celiac people are more likely to be afflicted with problems relating to malabsorption, including osteoporosis, tooth enamel defects, central and peripheral nervous system disease, pancreatic disease, internal hemorrhaging, organ disorders (gall bladder, liver, and spleen), and gynecological disorders. Untreated celiac disease has also been linked to an increased risk of certain types of cancer, especially intestinal lymphoma.

If you’re experiencing any of these symptoms regularly, even if you think you know why, you should schedule an appointment with your physician right away to get tested for celiac disease or gluten sensitivity.

Kendall Conrad has done a lovely job of recreating her gourmet recipes and customizing them to suit the principles which healed her child’s body- More Than 150 Delicious Specific Carbohydrate Diet(TM)-Compliant Recipes.

Author Kendall Conrad was faced with the fact that her youngest child’s gut and immune system had been severely compromised after her first ten months of life after being on many antibiotics to address severe ear infections. Her daughter finally needed surgery to drain her ears at only ten months old, which did resolve the ear troubles, but she was left with digestive troubles, wasn’t thriving, and wasn’t absorbing nutrients. Conrad spent a year visiting many doctors to no avail.

Conrad was introduced to a nutritionist who introduced her to the Specific Carbohydrate Diet, which eliminated virtually all starch and complex sugars. The result was that her daughter began to grow and feel much better. She is now a thriving healthy child.

This cookbook and its detailed introduction shares many aspects of the Specific Carbohydrate Diet’s effects on many people with Crohn’s disease, celiac disease, ulcerative colitis, IBS, diverticulitis, and other digestive conditions—to incredible results.

The recipes in Kendall’s book are gourmet in every sense of the word, and your family and guests will have no clue that each one of them is a strict adherent to the SCD.

This cookbook is given a thumbs up and is HIGHLY recommended by me.
Tina Turbin
www.glutenfreehelp.info

If you’ve recently been diagnosed with celiac disease, it is likely you’re still adapting to a gluten-free lifestyle. It may seem overwhelming at first to a celiac patient to begin the gluten-free road to recovery, as there are many challenges to face in adjusting to your new gluten-free diet. One of these challenges is avoiding gluten that can get in your food through cross-contamination.

It’s important to realize that any food processed on equipment shared with gluten is at risk to have at least some degree of contamination. In order for a product to be truly gluten-free, special handling is required at each step of the process—the growing, harvesting, milling, and processing of non-gluten grains. Shared equipment results in gluten contamination in the field, a manufacturing facility, a restaurant, or a home kitchen.

Make sure you are familiar with cross-contamination and how to avoid it to ensure that you’re eating a truly gluten-free diet!

Pamela’s Products NO COOK & SIMPLE COOKIES . These are delicious and fast and fun to make. Even kids enjoy these as they can get a “result” quickly and munch away. I made these for a wonderful cookie exchange in Tampa at the Celiac Group’s meeting. These were all eaten up and the plate was empty.

My Orange-Iced Lemon-Shortbread Delights. Another extremely delicious and easy adaptation of Pamela’s already make cookies and whipping up a frosting that is sweet, easy fun and absolutely scrumptious

You will need:

Two Boxes of Pamela’s Lemon Shortbread Cookies (Frozen)

½ bag of Pamela’s Vanilla Frosting

1 large orange

Water

4TBL Butter

Directions:

Add room temp. butter and water to half the bag of frosting

Mix well so no lumps.

Finely grate the orange rind to make orange zest (about 1-1/2-2 tsp. full)

Add to frosting and mix well and let sit about 15 minutes to “marinade”

Frost your cookies and set out for everyone to eat. (You may decorate them at this point too)

NOTE: I prefer to lightly frost my cookies as the flavor of both the lemon and orange come though this way. They are delicious!

You may store in refrig. or freezer covered.

If you have ever looked for a good gluten-free recipe for the perfect coating for your fish, shrimp, chicken, onion rings, potatoes, vegatables and you’ve settled for less, you are not alone. Finally, I have tested a product that is so far superior to any recipe or ready made”mix’ I’ve come across and so versatile that it can be used as a mix for meatloaves and to enhance the flavor of rice, stews, soups and much more—Dakota Lakes Gourmet Coating.

With my staff, I tested numerous recipes with this “spice blend,” and they all came out delicious. The fried and baked fish came out like the delicious fish I used to have in London. Our baked chicken came out better than intended. The onion rings were perfectly seasoned as well as our meatloaf.

According to president and owner Darold Walls, the Gourmet Coating is gluten-free and manufactured in the well-known packing plant in Seattle, Ener-G Foods, ensuring no cross-contamination or “poisoning.” Prior to each packing, the spice blend is tested at the Food Allergy Research Lab at the University of Nebraska. The Gourmet Coating is the perfect blend of flour, savory spices, and herbs for use in many dishes and meal options. It is convenient and very well-priced to serve the GF community.

Click here to view the embedded video.

Many children, especially autistic children, have to give up chicken nuggets. Luckily this product is the perfect substitute for this beloved kid’s dish, whether fried or baked.

I still can not believe the flavor of my various fishes as well as chicken dishes. I even added a 1/2 tsp. to scrambled eggs and the guests were raving. I am still amazed at how each dish I made tasted absolutely different but yet we are using the same seasoned mix- Dakota Lakes!

The box comes with many recipe suggestions as well as their websites, but any creative cook with an imagination can come up with many more ideas. The flavor is outstanding!

This food company is given a thumbs up and is HIGHLY recommended by me.

Connie Sarros has put together a book that kids will love as well as any adult who enjoys being with a child in the kitchen. The book is just full of fun!

Connie has taken special care to not only include only easy-to-prepare recipes, but each one is adaptable to the casein-free diet, opening the door for many more people to avail themselves of these recipes.

With 200 delicious recipes and many fun food projects such as scented gift ornaments, scented play dough, tree ornaments, bubbles, and more, one will be entertained in the kitchen with hours of delight.

This second edition, Wheat-Free, Gluten-Free Cookbook for Kids and Busy Adults really should be in every home of any family with a GF and/or CF child or even in the home of grandparents with a GF or CF grandchild.

This “full-of-fun” cookbook will allow any celiac, gluten-intolerant, or autistic child feel like being on his “restricted diet” is fun!

This cookbook is given a thumbs up and is HIGHLY recommended by me

Is there a cure for autism? Does diet help improve conditions for an autistic person, such as eliminating gluten and dairy? What about immunizations? Questions like these are presented in an honest memoir from mother, Jenny McCarthy.

There is not a page in this well-written book that isn’t a display of utmost sincerity, with pure desire to share her private life as a means to help others. Jenny takes the reader through her personal daily highs and lows resulting in a gradual revelation to some eye-opening facts of autism. Jenny pens her internal thoughts, emotions, and words, all as a means to reach out to help other mothers and to help increase awareness for autism, as well as imparting a fuller understanding of the disease.

Jenny and her son Evan have walked a path now familiar to families with an autistic child. Jenny never lost hope or her immense love for Evan and always saw the shining star he is. Together their determination and quest to find an “answer” reveals evidence everyone should read. This book is not just for someone with an autistic child; anyone will learn from this book, and I’d like to see more than a few doctors pick this book up and learn from it as well.

It’s beautifully written; I feel as if I know Jenny McCarthy personally. My admiration for her and Evan is immense, as the two of them opened my eyes, mind, and heart to the world of autism.

I give this book two thumbs up!

The key is planning ahead. Call the local health food stores where you’ll be staying well ahead of your trip and ask them about their selection of gluten-free foods. If there aren’t enough gluten-free choices, usually the store will be happy to order your favorite gluten-free foods for you.

If there aren’t any health food stores around, some grocery stores have health food sections and may be able to order gluten-free foods for you as well. You can always bring along your own supply of gluten-free foods, such as gluten-free flour and pasta for instance, or you can order online from your favorite gluten-free sites and have the gluten-free goodies delivered straight to where you’ll be staying. If you won’t be staying with friends or family, I suggest you rent a condo or get a hotel room with a full kitchen for your gluten-free cooking.

If you’ll be staying with family, particularly during the holidays, tell them ahead of time about your gluten-free diet needs so they can stock up gluten-free foods. You can also send them some gluten-free recipes for the family’s favorite holiday foods. Oftentimes you’ll find that your family will be more than happy to make your celiac child feel at home with gluten-free goodies and a generous stock of gluten-free foods for your gluten-free cooking.

Learning how to meet your gluten-free dietary needs has required some planning and a few adjustments, but in the end it isn’t very tough to successfully adopt a gluten-free lifestyle. Similarly, keeping yourself well-fed on gluten-free foods during travel and vacations requires some work and planning ahead, but you’ll find that you’ll get the hang of it in no time.

Dietitian and well-seasoned and educated Shelley Case has revised and released her eighth book, Gluten-Free Diet.

Within the first fifty pages, I had cleared up some extremely basic misunderstandings I had regarding making product choices and reading labels.

This book is a basic anyone new or old to celiac disease or gluten intolerance should have in their arsenal of tools for health and a high quality of life—so they can be free of mysteries, confusions, troubles and pain.

It is clear Shelley has a passion for and cares about helping celiacs, and she has a greater understanding than many. She wants everyone to understand it thoroughly, too. It appears that the Dr. Peter Green, Director of the Celiac Disease Center at Columbia University does to. Dr. Green refers his newly diagnosed patients to this very book.

This book will help anyone with the very details of testing, shopping, understanding labels easily and thoroughly, and meal planning. Shelley has researched over 270 American, Canadian and international companies. Details of each product are listed along with over 3,100 gluten-free specialty foods, by product and name.

This book is a valuable resource guide, educational book, cookbook, and more—all in one!
A must-have! This resource book is given a thumbs up and is HIGHLY recommended by me.
