Gluten-Free Orange-Iced Lemon-Shortbread Cookies

Pamela’s Products NO COOK & SIMPLE COOKIES . These are delicious and fast and fun to make. Even kids enjoy these as they can get a “result” quickly and munch away. I made these for a wonderful cookie exchange in Tampa at the Celiac Group’s meeting. These were all eaten up and the plate was empty.

My Orange-Iced Lemon-Shortbread Delights. Another extremely delicious and easy adaptation of Pamela’s already make cookies and whipping up a frosting that is sweet, easy fun and absolutely scrumptious

You will need:

Two Boxes of Pamela’s Lemon Shortbread Cookies (Frozen)

½ bag of Pamela’s Vanilla Frosting

1 large orange

Water

4TBL Butter

Directions:

Add  room temp. butter and water to half the bag of frosting

Mix well so no lumps.

Finely grate the orange rind to make orange zest (about 1-1/2-2 tsp. full)

Add to frosting and mix well and let sit about 15 minutes to “marinade”

Frost your cookies and set out for everyone to eat. (You may decorate them at this point too)

NOTE:  I prefer to lightly frost my cookies as the flavor of both the lemon and orange come though this way. They are delicious!

You may store in refrig. or freezer covered.

Gluten-Free Vitamins and Skin Care-Nu Skin and Pharmanex

Supplements can be an issue for a celiac. There are more and more companies guaranteeing GF vitamins and minerals with the rise in awareness of celiac disease and gluten issues.

The company Nu Skin has a gluten-free supplement line, Pharmanex, offering confirmed gluten-free dietary supplements in small packs—LifePak Nano—to address issues such as DNA protection, immune support, antioxidant defense, metabolism, and much more.

The supplements are also quality-guaranteed by the company, which says they can be an enhancement to an anti-aging program. Vitox is another GF supplement in individual capsules . This GF product supports important antioxidants, vitamins, minerals and essential nutrients. Nu Skin’s line of makeup is gluten-free and says soon many of their products will be, too.

Diane Poplawski had years of trouble with her own skin and even after being diagnosed celiac, the skin rashes didn’t clear up until she found Nu Skin’s lotions, cleansers, and makeup. She told me her two children, one celiac and the other having severe allergies, benefit from the lotions as well. Her kids are so sensitive that if they even kiss someone with gluten, they get a severe reaction. She can wear makeup and she has no worries now.

Gluten Free Cooking Expo is about to START!

That’s right! It’s that time of year again…the Gluten Free Cooking Expo and Vendor Fair is coming! Jen Cafferty is at it again! Attracting participants from all around the country and Canada, this great event teaches gluten-free dieters how to make delicious and healthy GF foods and more!

April 17th and 18th – The Wyndham Hotel, Lisle, Illinois

Some of the events to look forward are two days of GF cooking demonstrations by acclaimed authors, chefs, and nutritionists; printed recipes for you to refer; and learning how to prepare each dish (with taste-testing, too!).
